... for comfort food! Winter months are the perfect time to make something warm and comforting for dinner. Time for my good old crock pot to see some action!
I'm not a big meat eater, but somehow chilly temperatures and a dinner of beef stew seem to go to hand in hand. Here's how I prepare mine:
There are only three of us (hubby, Sweet Cheeks and me), so I usually get a little over a pound of cubed beef for the stew. I start by browning it in a skillet, adding a little salt and pepper to taste.

Meanwhile, I peel a couple of large potatoes, cube them and throw them in the crock pot along with some chopped onion and baby carrots.

I add an envelope of onion soup mix, and give it a good stir. The soup mix is pretty versatile.

As for the wine, it will have its turn later....
Now, let's drain the meat and put it on top of the veggies. Throw in a couple of bay leaves as well.

Then, add about 3/4 cup of beef broth and a little red wine (maybe 1/2 a cup) . If you don't use the wine, you should add a little more broth.

Now put the lid on the crock pot and let it cook on low for at least 8 hours, then serve and enjoy.

I don't have a picture of it, but feel free to serve some crusty bread to go along. I know they like each other. :)

Everyone seems to have their favorite when it comes to cold weather comfort food. I think a nice big bowl of soup with warm rolls is another perfect meal. What about you? What's your favorite winter comfort meal?

For tonight we're having Southwest Chicken Soup, and for Sunday Dinner we're having white beans and ham, okra and tomatoes and cornbread. :o)

I love to make chicken and noodles and make cornbread to go with it.
I also love chili and as a matter of fact I have some in the crock pot as I type. I love that with fritos and lots of grated cheese.

I've never use the onion soup mix with beef stew ,I do with roast. WIll have to try it.

That looks so good. We had stew one day last week and it didn't even make it to left-overs! I like stew, but chili is probably my favorite topped with cheese and fritos. I'll blog the next time I make it. Aren't crock pots handy?

I like stew, but I think a nice hot bowl of chicken noodle (plenty of noodles) soup is my favorite on a cold day. Just a can of Campbell's will do :-)

I'm with you, I like the beef stew. I haven't tried it with onion soup mix, but I will next time, thanks! My husband loves to try all different recipes for chili. I like it too, but only a little at a time, as it gives me heartburn!
I guess it's cold now, just about everywhere. It's 14 deg F now here in Maine, and I just came home from a hockey game. My fingers are a little stiff as I type. I think I need to go make some hot chocolate, if only just to wrap my hands around the mug!

We enjoy a Rachel Ray recipe during the winter. It's called Harvest Cream Corn Choup. It's so good!
That looks yummy and is our comfort food in the winter too. We have soup or stew once a week. It is a great way to use up left overs too!
We love beef stew too! It's on the menu for this week. We love soups and stews during the winter, along with bread or biscuits. I use my crockpot often during the winter.

My favorite comfort food is chicken and dumplings! My grandmother used to make homemade dumplings & they were SO good. I'm still trying to match 'em!
